Mary Starr - French Onion Soup Recipe

For Each Serving:
Toast One Slice bread, cut to fit soup casserole.
Grate one to two tablespoons American Cheese. (you can purchase pre-shredded)
Saute one medium-sized onion, thinly sliced, in 1 tablespoon butter.

When soft, add on cup Chicken or Beef stock... homemade or from bouillon cubes. Let onion simmer in stock 15 minutes or longer. Pour into casserole, top with toasted bread and sprinkle on cheese. Slip under boiler until cheese had melted and serve very hot.

"In Individual, covered soup dishes... good for a luncheon dish or to precede a dinner. Think of it as a cold weather bracer, for it smells so good cooking and has both a tangy, and rich taste." - Mary Starr
