Mary Starr - Curried Pecans Recipe

Spread pecan halves in shallow pan
Sprinkle with curry powder
Drizzle with Melted Butter or margarine
Place in 350 oven
Stir Frequently until golden brown and crisp.

Mary Starr - Chili Con Quesda Dip Recipe

Melt 1 pound of processed American Cheese in the top of a double boiler.

Blend in:
1 Can No. 2 Tomatoes well drained
1 Small can green chili peppers
1 large onion, finely diced
1 clove garlic, finely diced
Salt and Pepper

Heat over boiling water, stirring frequently. Serve in chafing dish or bowl over low heat.

Mary Starr - Chili Dip for Smoked Sausages and Franks Recipe

Combine:

1 Cup dairy sour cream
1 Teaspoon Worcestershire sauce
1/4 Cup Chili sauce
1 Teaspoon
2 Tablespoons minced onion
Salt and Pepper to Taste

Mary Starr - French Onion Soup Recipe

For Each Serving:
Toast One Slice bread, cut to fit soup casserole.
Grate one to two tablespoons American Cheese. (you can purchase pre-shredded)
Saute one medium-sized onion, thinly sliced, in 1 tablespoon butter.

When soft, add on cup Chicken or Beef stock... homemade or from bouillon cubes. Let onion simmer in stock 15 minutes or longer. Pour into casserole, top with toasted bread and sprinkle on cheese. Slip under boiler until cheese had melted and serve very hot.

Mary Starr - Country Style Pea Soup Recipe

1 Package split green peas, 1 lb. size
1 Ham bone (with plenty of meat left on)
1 1/2 cups diced potatoes
1 Cup diced Celery
1 Cup diced carrots
1 Teaspoon salt
8 Cups water
4 Cups tomato juice
1 Cup diced onion
1 Bay leaf
1/4 teaspoon pepper

Combine all in a large kettle; bring to boil, lower heat to simmer, about 1 1/2 hours.

Ham Balls
1 Egg
2 Tablespoons chopped parsley
2 Tablespoons White Lily Plain All-Purpose flour
1 Cup ground ham

Mix all together and form into small balls. Bring soup to boil again about 10 minutes before serving, and allow to simmer with the balls of ham for 10 minutes.

NOTE: This Soup freezes very well. I find that this recipe makes two portions of 8 servings each -- one for the table and one for the freezer. - Mary Starr

Mary Starr - Spiced Tea Mix Recipe

Mix Thoroughly:

1 jar Tang (1 lb., 2 oz size)
2 small packages Wyler's lemonade mix
2 Teaspoons cinnamon (Mary Starr used 1 1/2 teaspoons)
1 Teaspoon ground cloves (Mary Starr used 1/4 teaspoon)
2 Cups White Sugar
1/2 Cup instant tea

Use 2 teaspoons per cup and pour boiling water over mix.

Mary Starr - Punch For A Crowd Recipe

1 package lime gelatin
1 large can pineapple juice
1 bottle (16 oz.) concentrated lemon juice
16 cups cold water
2 cups hot water
3 cups sugar

Dissolve gelatin in hot water. Add sugar, *artificial sugar may be used is desired. Add juices. This may be mixed and carried in jar to picnic or party, then add water when ready to serve. Makes two gallons.

Mary Starr - Maple Milk Shake Recipe

2-3 tablespoons maple syrup
1/4 tablespoon vanilla flavoring
1 large scoop vanilla ice cream
1 cup milk

Mix in blender or in jar and shake well. This will make one large serving. Variations in flavor are easy. Pineapple syrup with lemon juice...fruit juices, mashed fresh fruits, honey, syrup or molasses and spice. Combine well with milk to make delicious drinks. Ice cream adds extra smoothness, flavor and eye appeal.

For Calorie Watchers, skim milk contains about half as many calories and blends well with mashed fruits for refreshing drinks.

Mary Starr - Sourdough Starter

Combine and mix well in glass or pottery container:
2 cups warm water
1 cake or package yeast
2 cups White Lily Bread flour
(NEVER USE METAL CONTAINER OR LEAVE METAL SPOON IN STARTER) Store covered overnight in warm place or closed cupboard. In the morning place 1/2 cup starter in scalded pint jar with a tight cover. Refrigerate for use next time.

Sourdough Bread Or Rolls

To remainder of sourdough starter add:
1/2 cup dry milk
1/2 cup sugar
1 teaspoon salt
2 beaten eggs
1 Stick Margarine (room temperature)

Add Flour to make soft dough. Cover, let rise in warm place until double. Punch Down, knead well. Repeat rising and kneading process. Form into rolls or loaves. Let ruse until double. Bake at 375 until golden brown. Dough may be refrigerated for several days.

Mary Starr - Sausage Rolls Recipe

Crumble Sausage in skillet. Cook over low heat until pink color has faded. Drain on paper towels. Prepare regular biscuit dough. Roll in rectangle 1/4 to 1/2 inch thick. Cover dough generously with crumbled sausage. Roll as for jelly roll. Wrap wax paper around roll. Gently squeeze roll making it longer and thinner, from 2 to 4 inches in diameter. Chill until firm enough to slice, about 1/2 inch slices. Bakine in 450 Degree Oven.

To freeze, remove from oven when dough shows first trace of brown. When just cool enough to handle biscuit with fingers, put in freezer container or wrap and freeze. When ready to serve, heat oven to 450 and bake about 5 minutes or until brown.

Extra biscuit dough may be baked and frozen in same manner - put in freezer warm. Will be moist when baked at serving time.

Mary Starr - Chewy Peanut Butter Bars Recipe

Chewy Peanut Butter Bars

1/3 cup shortening
½ cup peanut butter
¼ cup light brown sugar, firmly packed
1 cup granulated sugar
1 teaspoon vanilla
2 eggs
1 cup unsifted White Lily plain all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 1/3 cups coconut*

Preheat oven to 350°.

In the mixer cream together shortening, peanut butter, brown sugar, and granulated sugar. Add vanilla and eggs and beat well. Add flour, baking powder and salt and blend well. Stir in coconut to mix well. Spread evenly into a greased 13x9x2 inch pan. Bake for about 25 minutes in the preheated oven or until golden brown and done. Cool and cut into bars.

*NOTE: The original recipe calls for a 3.5 oz. can of coconut which is equal to 1 1/3 cups. The canned coconut is twice as expensive as what comes in a bag! You can leave the coconut out if you don’t like coconut. It does add a nice texture.

Mary Starr - Senate Bean Soup Recipe

"Served every day in the Senate Restaurant... also served in the house of representatives Restaurant."

1 lb. dried beans, marrow, navy, pea or great Northern
Water to make 5 quarts
Smoked Ham Bone with Meat on it
3 Medium potatoes, cooked and mashed
2 cloves garlic, minced
1 Cup Chopped Onion
1 Cup Chopped Celery

Soak Beans overnight in water to cover. Next morning add waster to make five quarts. Add ham bone. Simmer about two hours or until beans begin to mush. Add cooked and mashed potatoes, onion, celery, and garlic. Simmer one hour. Remove bone, cut up meat and return to soup. Season to taste with salt and pepper. Makes about four and a half courts.

Mary Starr's - Weight Watcher's Soup Recipe

'You may eat as much as you want, anytime you are hungry'

Combine In Large Saucepan:
3 Cups Tomato juice
3 Cups Water
1 Cup Cut Cabbage
1 Tablespoon Parsley Flakes
2 Cups cut celery, including leaves
2 tablespoons vegetable flakes
Green Pepper, Mushrooms
2 bouillon cubes or packets Herb-Ox MBT... Found at all dietary counters

Optional:
French Style Green Beans, Chinese Vegetables or bean sprouts.
Simmer Mixture until cabbage is tender

Mary Starr - Mocha Velvet Drink Recipe

Ingredients:

JFG Coffee
Chocolate Ice Cream

Freeze Strong, black JFG coffee in the bottom of a punch bowl or make coffee ice cubes.
When ready to serve, place chocolate ice cream in punch bowl or individual tall glasses. Pour Strong warm JFG coffee over just before serving.

Mary Starr 'Cheese Straw' Recipe

1 Cup White Lily Plain All-Purpose Flour
1 Cup New York Sharp Cheese, shredded
1/2 teaspoon salt
1/4 cup sesame seed, toasted
1/2 teaspoon ginger
1/2 teaspoon Accent
1/2 teaspoon Worcestershire sauce
1/3 cup shortening (margarine)
2 to 2 1/2 tablespoons cold water

Mix, adding water last. Roll out thin...cut in narrow strips. Bake Until Light brown in 400 degree oven...ready in about 10 minutes!

Marry Starr Recipe - Seasoned Toasted Pecans

Spread in shallow pan - 2 cups pecan halves
Blend in small custard cup:
2 tablespoons margarine or butter, melted
2 teaspoons seasoned salt

With teaspoon drizzle mixture evenly over pecans. Place in 275 degree oven on center rack. Bake on hour, stirring pecans several times. Cool thoroughly in pan before storing

Chicken-Broccoli Casserole

4 chicken breast (8 pcs.)
3 packages broccoli, cooked
3/4 cup parmesan cheese

Sauce:
6 tablespoons butter
3 cups chicken stock
6 tablespoons of flower
1 teaspoon salt
3 or 4 tablespoons sherry
1/2/ teaspoon pepper

Melt butter: add flour to make paste. Add stock slowly. Add sherry, salt, and pepper. Cook only until it begins to thicken. Place chicken and broccoli in casserole alternately. Add sauce. Sprinkle with parmesan cheese and bake 15 minutes at 425. Serves 8.

Peanut Butter Muffins

Sift together:
2 cups bread flour
3 teaspoons baking powder
1/3 or 1/4 cup sugar
1 teaspoon of salt

Work into this with fork:

3/4 cup peanut butter
2 tablespoons melted butter

When mixture is like little peas, add and mix lightly.
1 egg beaten
1 scant cup milk

Bake in greased muffin pans or paper cups, filling only half full since dough rises quite high. Bake at 400 degrees about 20 minutes or until browned.

Mary Starr Recipe - Apple Relish

"Seems to be the perfect complement to any meat dish"
14 large apples, peeled and quartered 6 sweet peppers, 3 red, 3 green 2 hot peppers, not too large 6 onions
1 1/2 cups brown sugar
1 tablespoon celery seed
112 teaspoon salt
4 whole cloves
1-2 pieces cinnamon bark, broken up 3 cups vinegar 1 cup water

Chop apples, peppers, onions as you would for mincemeat (not too fine). Add other ingredients ... Cook for ten minutes and pour into jars and seal.

We like the Winesap apples since they do not cook to pieces too quickly.

Pecan-Crunch Sweet Potato Pie

Blend together:

3/4 cup finely chopped pecans
1/3 cup brown sugar firmly packed
2 tablespoons soft butter or margarine

Press gently onto bottom of a 9 inch unbaked pie shell, chilled. Mix and beat gently to blend:


2/3 cup brown sugar firmly packed
2 eggs, beaten frothy
1 cup mashed cooked sweet potatoes or yams, strained
1 table spoon plain all-purpose flour
1/2 teaspoon each cloves cinnamon, salt
1/4 teaspoon each nutmeg and ginger
1 cup light cream

Pour into pie shell. Bake 55 to 60 minutes at 400 or until knife inserted in center comes out clean. Makes 8 servings.

Texas Hot Cocoa Cake

A favorite of everyone

Combine in a saucepan and bring to a boil:
1 stick butter
3 tablespoons cocoa
1/2 cup cooking oil
1 cup water


Stir in:
2 cups White Lily Self-Rising flour sifted with 2 cups sugar

Add and mix well:
1/2 cup buttermilk
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 beaten eggs


Pour into a greased and floured 9x13 inch pan. Bake at 350 about 30 minutes or until done.


Remove from oven and cool in pan about 10 minutes, then top with the following frosting.

Frosting:

Melt:
2 sticks butter
Add:
2 tablespoons cocoa
6 tablespoons milk

Add:
1 box confectioners' sugar
1 cup pecans
1 teaspoon vanilla

This makes a soft icing.
