Mary Starr - Witches Brew

To Serve on Halloween

Combine and Refrigerate overnight:
1 Large Can Frozen Orange Juice
1 Gallon Apple Cider
12 Whole Cloves
6 Whole Allspice
Red Hot Cinnamon Candies

When ready to serve, add one party pak ginger ale. May be heated or served cold with ice cubes.



(Note from Editor of blog: A great Idea for Halloween parties, if you put dry ice in cups or a bowl safe for dry ice your brew will appear to have steam, or fog coming from it.)

Mary Starr - Pumpkin Bread Recipe

Combine:3 Cups Sugar
4 Beaten Eggs
1 Cup Corn Oil

Add and Blend 1 can (1 lb.) Pumpkin. Sift Together and Add:
3 1/2 Cups White Lily Bread Flour
1 Teaspoon baking powder
2 Teaspoons Soda
2 Teaspoons Salt
1/2 Teaspoon Cloves
1 Teaspoon Nutmeg
1 Teaspoon Cinnamon
1 Teaspoon Allspice

Add:2/3 Cup Water

Bake: in 2 greased pans and floured loaf pans 1 hour at 350.

Mary Starr - Red Velvet Cake Recipe

Mix and Set aside:
3 tablespoons cocoa mix
2 ounces red food coloring

Cream:
1/2 cup vegetable shortening
1 1/2 cup sugar

Add coloring paste & 2 Eggs - Beat Well.

Add:
1 cup buttermilk
2 1/2 cups White Lily Plain All-Purpose flour (sifted three times)
1 Teaspoon salt
1 Teaspoon vanilla

Mix Well:
Stir by spoon: 1 tablespoons vinegar
when well blended, add: 1 teaspoon soda
Mix well. Bake in well greased and floured 8 inch layer cake pans (3)
Bake 30 to 35 minutes at 350.

Icing:
Cream;
1 stick butter
1/2 cup vegetable shortening
1 cup confectioner's sugar
3 tablespoons White Lily Plain All-Purpose flour (1 at a time)

Add:
2/3 cup milk (room temperature)
1 teaspoon desired flavoring
Beat well with Mixer

For Valentine cake bake 1 square and 1 round layer. Cut round layer in half to form heart.

Mary Starr - One Minute Chocolate Frosting Recipe

Combine in Saucepan:
2 Cups sugar
1/2 Cup Milk
1/2 cup Cocoa
1 Stick Margarine

Place on cold range unit. Turn to medium heat. Bring to boil.
Boil hard one minute. Remove from heat and add 1 teaspoon vanilla.
Cool (set pan in cold water). Beat to spreading consistency.

Mary Starr - German Chocolate Pound Cake

2 Cups Sugar
4 Eggs
3 Cups sifted White Lily Plain All-Purpose Flour
1 Package German's sweet Chocolate
2 Teaspoons butter flavor
1/2 teaspoon soda
1 Cup shortening
2 Teaspoons Vanilla
1 Cup buttermilk
1 Teaspoon salt

Cream Sugar and shortening. Add eggs, flavors and buttermilk.
Sift together; flour, soda and salt and add. Mix well.
Add German Chocolate that has been softened in warm oven or in double boiler.
Blend together well. Cook in 9 inch stem pan, that has been well greased and dusted with flour, about 1 1/2 hours at 300 degrees.
Test with a toothpick.
If done, toothpick will come out clean when inserted in the cakes center.
Place cake under a tight fitting cake cover, while still hot, and leave covered until cold.

Mary Starr - Smoked Barbecued Leg Of Lamb Recipe

(For Enclosed Grill)

6 to 9 lb. leg of lamb
1 onion, minced
Grated rind 2 lemons
3 in. sprig of fresh mint or 2 tablespoons mint jelly
1 tablespoon prepared herbs for salad or 3 teaspoons combined minced herbs (thyme, tarragon, rosemary, marjoram)
3 tablespoons brown sugar
1 teaspoon freshly ground black pepper
1 clove garlic, minced
2 tablespoons olive oil
1/2 cup lemon juice

Prepare lamb for roasting as usual. Form a pan of double thick heavy duty foil to fit lamb, turning up edges of foil 1 inch all around and mitering corners so it's firm. (A low aluminum pan may be used)

Prepare a barbecue sauce as follows:
Saute the garlic and onion 2 minutes in the olive oil
Add other ingredients and simmer for 3 minutes

Let cool and sit for several hours or use immediately depending on the time you have. (If you let it sit for a while, reheat before using)
Brush the lamb on all sides with the sauce and let stand at room temperature for an hour or more, brushing twice more before putting on to cook.
Have fire ready in grill with charcoal white hot. Transfer lamb to rack over the fire, close to cover, adjust vents to 1/2 open and cook for 2 1/2 to 3 hours.
If you use meat thermometer inserted in the thickest part of the meat, not touching the bone, it should register 175 degrees when done.
Baste several times during cooking.
For added flavor add damp hickory bark or green twigs of wild cherry to charcoal about 1 hour before roasting is finished.
When meat is done, transfer to warm carving board and slice.
Add any leftover sauce to drippings in pan and serve with lamb.

Mary Starr - Batchelor Button Cookies

Cream together until light:
3/4 cup shortening
1 egg
1 cup firmly packed brown sugar

Sift together and add (mixing with spoon):
2 cups sifted White Lily Plain All-Purpose flour
1 teaspoon soda
3/4 teaspoon salt

Add 1 teaspoon vanilla and 1/2 cup chopped nuts. Drop by spoonfuls onto greased baking sheet. Bake about 10 minutes at 375. 1/2 cup of any of the following may be substituted for the chopped nuts; coconut, candied or maraschino cherries, chocolate chips, raisins.

Mary Starr - Chocolate Angel Food Cake Recipe

3/4 cup sifted white Lily Plain All-Purpose flour
4 tablespoons cocoa
1 1/4 cups egg whites
1/4 teaspoon salt
1 teaspoon cream of tarter
1 1/4 cups sifted sugar
1 teaspoon vanilla

Sift flour, coca, and sugar together six times. Beat egg whites until foamy throughout.
Add salt and cream of tarter and continue beating until eggs are stuff enough to hold a peak but not dry. Fold in vanilla, sift two to three tablespoons dry ingredients at a time over egg whites. Fold in lightly until all is used. Pour batter into ungreased tube pan and cut through batter with spatula to remove air bubbles.
Bake in 350 degree oven 50 to 70 minutes. Invert Pan and let cake hang until cool.

*You may add whipped cream and fresh cut strawberries like shown below!

Mary Starr - Whipped Cream Topping Recipe

Combine in Saucepan:
Grated rind and juice of one orange
2 egg yolks
1/2 cup sugar

Cook over low heat until thick, stirring while cooking. Set aside to cool. Whip 1/2 pint heavy cream. Blend whipped cream with orange mixture.



Suggested for: Pumpkin pie or other desserts.

Mary Starr - Sweet and Sour Shrimp Recipe

2 lbs of shrimp, cleaned and veined
3 tablespoons butter or substitute
2 1/2 Cups (No. 2 can) Pineapple chunks
2 Tablespoons silvered crystallized ginger (or substitute 1 tablespoon powdered ginger)
1 Green Pepper
1/2 Cup Vinegar
1/2 Cup Sugar
Salt
1 Tablespoon soy sauce
2 1/2 tablespoons corstarch

Toss cleaned shrimp in melted butter and cook 5 minutes. Stir occasionally.
Now Pour pineapple juice, add silvered ginger, pepper cut in strips, vinegar, sugar, salt and soy sauce.
Cook over low heat about 2 minutes. Use a little of liquid and mix with cornstarch.
Pour back into shrimp mixture and cook till thickened. Serve with fluffy white rice.
Serves 6.

Mary Starr - Stuffed Peppers Recipe

4 Small Green Peppers
2 Tablespoons finely cut onion
1 1/2 teaspoons shortening (I usually omit this and use grease from hamburger)
3 Tablespoons finely cute celery
1 Cup Ry-Krisp crumbs (6 wafers)
1/3 Cup drained canned tomatoes (Fresh ones may be used)
3/4 lb. lean ground beef
1/2 teaspoon salt
Dash of Pepper

Remove tops and seeds from peppers. Cover with boiling water; cook for 5 minutes. -- Drain.
Brown mean which is broken up in small crumbles in hot shortening.
Add Onion, celery, crumbs, tomatoes, Salt, & Pepper.
Stuff peppers with meat mixture.
Stand peppers upright in baking dish containing an inch of hot water.
Cover and Bake in moderately slow oven (350 degrees) for 1 hour.
Serves 4.

Mary Starr - Shrimp Risotto Recipe

Preheat electric skillet to 275. Melt in skillet 1/2 cup butter or margarine.

Add and saute 5 Minutes: 1/2 Cup finely chopped onion and 1 1/2 pounds cleaned shrimp (4 to 4 a1/2 cups).

Add and brown lightly 2 Cups regular raw rice. Combine and add 5 cups hot chicken stock, 1 Cup white wine, 2 teaspoons salt, and 3/4 Cup chopped green pepper.

Bring to boil, stirring frequently. Cover, reduce temperature to low.

Cook 45 minutes. Turn temperature to off; do not remove cover for 15 minutes.

Dissolve 1/2 teaspoon saffron in 1/2 cup hot water. Stir into Rice mixture.

Top with grated Parmesan cheese.

Mary Starr - French Cup Cakes Recipe

3 Squares Chocolate
1 Cup Butter
1/2 cup English walnuts
2 Cups powdered Sugar
3 eggs, separated
1 Teaspoon vanilla

Melt Chocolate Cream Butter and powdered sugar - add yolks - and Melted Chocolate.
Mix Thoroughly:
add Nuts & Vanilla - fold in stiffly beaten egg whites - pour in paper cups which have been sprinkled with graham cracker crumbs.

Sprinkle with:
a few crumbs over top
Chill 8 to 12 hours.
Serve with whipped cream.
Makes 12-14 Cup Cakes
*Vanilla Wafer crumbs may be used instead of graham crackers.

Mary Starr - Cream Puffs Recipe

Heat to boiling point in saucepan:
1 Cup Water 1/2 Cup Butter

Stir In:
1 Cup Sifted White Lily Plain Flour.
Stir Constantly until mixture leaves the pan and forms into a ball. Remove from heat. Cool.

Beat In:
One at a time - 4 Eggs.

Beat mixture until smooth and velvety. Drop from spoon onto ungreased baking sheet. Bake until dry. Allow to cool slowly.
(Fill with sweetened Whipped Cream, dust with confectioners' sugar.)

Bake 45 to 50 minutes in a moderately hot oven, 400 degrees.

FILLINGS:

Custard Filling:
Mix Together in Saucepan:
1/2 cup sugar
1/2 teaspoon salt
6 teaspoons White Lily Plain All Purpose flour

Stir In, 2 Cups top milk or cream and milk. Cook over low heat, stirring until it boils. Boil 1 minute. Remove from heat. Stir a little of this mixture into 4 egg yolks (or 2 eggs), beaten. Blend into hot mixture in saucepan. Bring to boiling point. Cool and blend in 2 teaspoons vanilla or other flavorings.

Ice Cream:
Fill cream puffs with ice cream. Serve with appropriate sauce, chocolate sauce with peppermint, butterscotch sauce with burnt almond ice cream.

Fruit Filled Cream Puffs:
Fold stiffly whipped cream into sweetened cut up fresh fruit, 1/4 cup sugar and 3/4 cup whipping cream. (strawberries, Raspberries, Sweet Cherries, Peaches, etc.)

Chocolate Icing:

Thin Chocolate Icing:
Melt together 2 tablespoons shortening, 2 squares chocolate (2 oz.)
Blend in 1 Cup sifted confectioners' sugar, 2 tablespoons boiling water. Beat until smooth, but not stiff. Ice the eclairs, using pastry tube with tip.

Mary Starr - Frozen Chocolate Velvet Pie Recipe

Beat two egg whites, 1/8 teaspoon salt until soft peaks form. Gradually add, continuing to beat until very stiff, 1/4 cup granulated sugar. Fold in 2 cups finely chopped walnuts. Spread in a greased eight-inch pie pan, building the sides up 3/4 inch high. Bake 12 minutes at 400, then cool.

Meanwhile Combine in a saucepan:
1/4 White corn syrup
1 Tablespoon water

Bring just to the boiling point. Remove from heat.
Stir In:
1 tablespoon vanilla
1 Cup semi-sweet chocolate bits

Stir until chocolate has melted, then cool. Reserve 2 tablespoons mixture.
Combine remaining chocolate mixture in big bowl of mixer with:
2/3 Cup chilled sweetened condensed milk
1 1/2 cups heavy cream

Blend well, then beat until soft peaks form. Spread in cooled meringue shell. Freeze uncovered until firm. Garnish with reserved chocolate mixture. Return to freezer until garnish is firm, then wrap for storage. Pie will keep frozen for one month.
Note: I found this amount will make a nine inch pie and in my oven it is better to use 350 degree temperature for shell.

Mary Starr - Hawaii's Coconut Cream Pie Recipe

Combine In Sauce pan:
2 Cups Milk
1/2 cup sugar

Let come to near boil, then stir in:
4 Tablespoons cornstarch
Pinch of Salt
4 Egg Yolks
1 Tablespoon Butter

Let cool for a few moments, then add:
1/4 Cup fresh grated coconut
Vanilla to flavor

Cool and fill baked pie shell.

Make Meringue:
4 or 6 Egg Whites (depending on high you want it)
1/2 Teaspoon salt
1/4 Cup sugar
1/2 Teaspoon Vanilla extract

Beat egg whites with 1/2 teaspoons salt until soft peaks form. Gradually beat in, a little at a time...1/4 cup sugar. Add 1/2 teaspoon vanilla extract. When meringue is very stiff and begins to lose its gloss, spread over pie filling, making sure it is sealed firmly to edges of pastry. Sprinkle with more grated coconut and brown in moderate oven.

Mary Starr - Peach Apricot Cobbler

Drain:
1 Can (1 lb. 13 oz.) sliced peaches
1 Can (8 3/4 oz.) apricot halves

Add enough peach juice to apricot juice to make 1 cup juice.
Combine in small saucepan:
1/2 Cup sugar
1 Tablespoon cornstarch

Blend in the cup of juice and cook over medium heat, stirring constantly, until mixture comes to boil. Cook one minute longer.
Remove from heat and stir in:
1 Tablespoon butter or margarine
1/4 tablespoon Cinnamon

Add fruits to thicken juice and pour 1 1/2 quarts casserole. Place in 400 degree oven while you prepare topping.

Topping:
Sift Together:
1 Cup White Lily Plain All-Purpose Flour
1 Tablespoon Sugar
1 1/2 Teaspoons baking powder
1/2 Teaspoon salt

Blend In:
3 Tablespoons shortening

Add:
1/2 Cup milk
Stir to make soft dough. Drop by spoonfuls over hot fruit. Bake until lightly browned (about 30 minutes) Serve warm with cream or Vanilla Ice Cream.

Mary Starr - Nine Day Slaw Recipe

Shred:
3 lbs cabbage

Chop:
1 Green Pepper
2 Onions

Combine & Bring to rolling boil:

1 Cup Vinegar
2 Tablespoons Salt
1 Cup Sugar
1 Cup Salad Oil
2 Tablespoons Mustard Seed

Pour, while hot, over cabbage mixture. Chill

Mary Starr - Teriyaki Steak Recipe

Place a large round steak (or preferred cut of steak) in a shallow dish.

Combine:
1 Cup soy sauce
1/2 Teaspoon ground ginger
1 Clove garlic, crushed
3 Tablespoons sugar

Taste:
If too sweet add a little salt; if too salty add a little more sugar.
Pour over the steak, which may be cut in serving pieces if desired.
Marinate for one hour, turning twice. Grill over hot coals, turning and grilling until nicely browned.
Steak may basted with the marinade and heated to serve as gravy if you wish. The sauce may be thickened if preferred.
* Serve with baked potato or rice, tossed green salad.

Mary Starr - Curried Pecans Recipe

Spread pecan halves in shallow pan
Sprinkle with curry powder
Drizzle with Melted Butter or margarine
Place in 350 oven
Stir Frequently until golden brown and crisp.

Mary Starr - Chili Con Quesda Dip Recipe

Melt 1 pound of processed American Cheese in the top of a double boiler.

Blend in:
1 Can No. 2 Tomatoes well drained
1 Small can green chili peppers
1 large onion, finely diced
1 clove garlic, finely diced
Salt and Pepper

Heat over boiling water, stirring frequently. Serve in chafing dish or bowl over low heat.

Mary Starr - Chili Dip for Smoked Sausages and Franks Recipe

Combine:

1 Cup dairy sour cream
1 Teaspoon Worcestershire sauce
1/4 Cup Chili sauce
1 Teaspoon
2 Tablespoons minced onion
Salt and Pepper to Taste

Mary Starr - French Onion Soup Recipe

For Each Serving:
Toast One Slice bread, cut to fit soup casserole.
Grate one to two tablespoons American Cheese. (you can purchase pre-shredded)
Saute one medium-sized onion, thinly sliced, in 1 tablespoon butter.

When soft, add on cup Chicken or Beef stock... homemade or from bouillon cubes. Let onion simmer in stock 15 minutes or longer. Pour into casserole, top with toasted bread and sprinkle on cheese. Slip under boiler until cheese had melted and serve very hot.

Mary Starr - Country Style Pea Soup Recipe

1 Package split green peas, 1 lb. size
1 Ham bone (with plenty of meat left on)
1 1/2 cups diced potatoes
1 Cup diced Celery
1 Cup diced carrots
1 Teaspoon salt
8 Cups water
4 Cups tomato juice
1 Cup diced onion
1 Bay leaf
1/4 teaspoon pepper

Combine all in a large kettle; bring to boil, lower heat to simmer, about 1 1/2 hours.

Ham Balls
1 Egg
2 Tablespoons chopped parsley
2 Tablespoons White Lily Plain All-Purpose flour
1 Cup ground ham

Mix all together and form into small balls. Bring soup to boil again about 10 minutes before serving, and allow to simmer with the balls of ham for 10 minutes.

NOTE: This Soup freezes very well. I find that this recipe makes two portions of 8 servings each -- one for the table and one for the freezer. - Mary Starr

Mary Starr - Spiced Tea Mix Recipe

Mix Thoroughly:

1 jar Tang (1 lb., 2 oz size)
2 small packages Wyler's lemonade mix
2 Teaspoons cinnamon (Mary Starr used 1 1/2 teaspoons)
1 Teaspoon ground cloves (Mary Starr used 1/4 teaspoon)
2 Cups White Sugar
1/2 Cup instant tea

Use 2 teaspoons per cup and pour boiling water over mix.

Mary Starr - Punch For A Crowd Recipe

1 package lime gelatin
1 large can pineapple juice
1 bottle (16 oz.) concentrated lemon juice
16 cups cold water
2 cups hot water
3 cups sugar

Dissolve gelatin in hot water. Add sugar, *artificial sugar may be used is desired. Add juices. This may be mixed and carried in jar to picnic or party, then add water when ready to serve. Makes two gallons.

Mary Starr - Maple Milk Shake Recipe

2-3 tablespoons maple syrup
1/4 tablespoon vanilla flavoring
1 large scoop vanilla ice cream
1 cup milk

Mix in blender or in jar and shake well. This will make one large serving. Variations in flavor are easy. Pineapple syrup with lemon juice...fruit juices, mashed fresh fruits, honey, syrup or molasses and spice. Combine well with milk to make delicious drinks. Ice cream adds extra smoothness, flavor and eye appeal.

For Calorie Watchers, skim milk contains about half as many calories and blends well with mashed fruits for refreshing drinks.

Mary Starr - Sourdough Starter

Combine and mix well in glass or pottery container:
2 cups warm water
1 cake or package yeast
2 cups White Lily Bread flour
(NEVER USE METAL CONTAINER OR LEAVE METAL SPOON IN STARTER) Store covered overnight in warm place or closed cupboard. In the morning place 1/2 cup starter in scalded pint jar with a tight cover. Refrigerate for use next time.

Sourdough Bread Or Rolls

To remainder of sourdough starter add:
1/2 cup dry milk
1/2 cup sugar
1 teaspoon salt
2 beaten eggs
1 Stick Margarine (room temperature)

Add Flour to make soft dough. Cover, let rise in warm place until double. Punch Down, knead well. Repeat rising and kneading process. Form into rolls or loaves. Let ruse until double. Bake at 375 until golden brown. Dough may be refrigerated for several days.

Mary Starr - Sausage Rolls Recipe

Crumble Sausage in skillet. Cook over low heat until pink color has faded. Drain on paper towels. Prepare regular biscuit dough. Roll in rectangle 1/4 to 1/2 inch thick. Cover dough generously with crumbled sausage. Roll as for jelly roll. Wrap wax paper around roll. Gently squeeze roll making it longer and thinner, from 2 to 4 inches in diameter. Chill until firm enough to slice, about 1/2 inch slices. Bakine in 450 Degree Oven.

To freeze, remove from oven when dough shows first trace of brown. When just cool enough to handle biscuit with fingers, put in freezer container or wrap and freeze. When ready to serve, heat oven to 450 and bake about 5 minutes or until brown.

Extra biscuit dough may be baked and frozen in same manner - put in freezer warm. Will be moist when baked at serving time.

Mary Starr - Chewy Peanut Butter Bars Recipe

Chewy Peanut Butter Bars

1/3 cup shortening
½ cup peanut butter
¼ cup light brown sugar, firmly packed
1 cup granulated sugar
1 teaspoon vanilla
2 eggs
1 cup unsifted White Lily plain all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 1/3 cups coconut*

Preheat oven to 350°.

In the mixer cream together shortening, peanut butter, brown sugar, and granulated sugar. Add vanilla and eggs and beat well. Add flour, baking powder and salt and blend well. Stir in coconut to mix well. Spread evenly into a greased 13x9x2 inch pan. Bake for about 25 minutes in the preheated oven or until golden brown and done. Cool and cut into bars.

*NOTE: The original recipe calls for a 3.5 oz. can of coconut which is equal to 1 1/3 cups. The canned coconut is twice as expensive as what comes in a bag! You can leave the coconut out if you don’t like coconut. It does add a nice texture.

Mary Starr - Senate Bean Soup Recipe

"Served every day in the Senate Restaurant... also served in the house of representatives Restaurant."

1 lb. dried beans, marrow, navy, pea or great Northern
Water to make 5 quarts
Smoked Ham Bone with Meat on it
3 Medium potatoes, cooked and mashed
2 cloves garlic, minced
1 Cup Chopped Onion
1 Cup Chopped Celery

Soak Beans overnight in water to cover. Next morning add waster to make five quarts. Add ham bone. Simmer about two hours or until beans begin to mush. Add cooked and mashed potatoes, onion, celery, and garlic. Simmer one hour. Remove bone, cut up meat and return to soup. Season to taste with salt and pepper. Makes about four and a half courts.

Mary Starr's - Weight Watcher's Soup Recipe

'You may eat as much as you want, anytime you are hungry'

Combine In Large Saucepan:
3 Cups Tomato juice
3 Cups Water
1 Cup Cut Cabbage
1 Tablespoon Parsley Flakes
2 Cups cut celery, including leaves
2 tablespoons vegetable flakes
Green Pepper, Mushrooms
2 bouillon cubes or packets Herb-Ox MBT... Found at all dietary counters

Optional:
French Style Green Beans, Chinese Vegetables or bean sprouts.
Simmer Mixture until cabbage is tender

Mary Starr - Mocha Velvet Drink Recipe

Ingredients:

Chocolate Ice Cream

Freeze Strong, black JFG coffee in the bottom of a punch bowl or make coffee ice cubes.
When ready to serve, place chocolate ice cream in punch bowl or individual tall glasses. Pour Strong warm JFG coffee over just before serving.

Mary Starr 'Cheese Straw' Recipe

1 Cup White Lily Plain All-Purpose Flour
1 Cup New York Sharp Cheese, shredded
1/2 teaspoon salt
1/4 cup sesame seed, toasted
1/2 teaspoon ginger
1/2 teaspoon Accent
1/2 teaspoon Worcestershire sauce
1/3 cup shortening (margarine)
2 to 2 1/2 tablespoons cold water

Mix, adding water last. Roll out thin...cut in narrow strips. Bake Until Light brown in 400 degree oven...ready in about 10 minutes!

Marry Starr Recipe - Seasoned Toasted Pecans

Spread in shallow pan - 2 cups pecan halves
Blend in small custard cup:
2 tablespoons margarine or butter, melted
2 teaspoons seasoned salt

With teaspoon drizzle mixture evenly over pecans. Place in 275 degree oven on center rack. Bake on hour, stirring pecans several times. Cool thoroughly in pan before storing

Chicken-Broccoli Casserole

4 chicken breast (8 pcs.)
3 packages broccoli, cooked
3/4 cup parmesan cheese

Sauce:
6 tablespoons butter
3 cups chicken stock
6 tablespoons of flower
1 teaspoon salt
3 or 4 tablespoons sherry
1/2/ teaspoon pepper

Melt butter: add flour to make paste. Add stock slowly. Add sherry, salt, and pepper. Cook only until it begins to thicken. Place chicken and broccoli in casserole alternately. Add sauce. Sprinkle with parmesan cheese and bake 15 minutes at 425. Serves 8.

Peanut Butter Muffins

Sift together:
2 cups bread flour
3 teaspoons baking powder
1/3 or 1/4 cup sugar
1 teaspoon of salt

Work into this with fork:

3/4 cup peanut butter
2 tablespoons melted butter

When mixture is like little peas, add and mix lightly.
1 egg beaten
1 scant cup milk

Bake in greased muffin pans or paper cups, filling only half full since dough rises quite high. Bake at 400 degrees about 20 minutes or until browned.

Mary Starr Recipe - Apple Relish

"Seems to be the perfect complement to any meat dish"
14 large apples, peeled and quartered 6 sweet peppers, 3 red, 3 green 2 hot peppers, not too large 6 onions
1 1/2 cups brown sugar
1 tablespoon celery seed
112 teaspoon salt
4 whole cloves
1-2 pieces cinnamon bark, broken up 3 cups vinegar 1 cup water

Chop apples, peppers, onions as you would for mincemeat (not too fine). Add other ingredients ... Cook for ten minutes and pour into jars and seal.

We like the Winesap apples since they do not cook to pieces too quickly.

Pecan-Crunch Sweet Potato Pie

Blend together:

3/4 cup finely chopped pecans
1/3 cup brown sugar firmly packed
2 tablespoons soft butter or margarine

Press gently onto bottom of a 9 inch unbaked pie shell, chilled. Mix and beat gently to blend:


2/3 cup brown sugar firmly packed
2 eggs, beaten frothy
1 cup mashed cooked sweet potatoes or yams, strained
1 table spoon plain all-purpose flour
1/2 teaspoon each cloves cinnamon, salt
1/4 teaspoon each nutmeg and ginger
1 cup light cream

Pour into pie shell. Bake 55 to 60 minutes at 400 or until knife inserted in center comes out clean. Makes 8 servings.

Texas Hot Cocoa Cake

A favorite of everyone

Combine in a saucepan and bring to a boil:
1 stick butter
3 tablespoons cocoa
1/2 cup cooking oil
1 cup water


Stir in:
2 cups White Lily Self-Rising flour sifted with 2 cups sugar

Add and mix well:
1/2 cup buttermilk
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 beaten eggs


Pour into a greased and floured 9x13 inch pan. Bake at 350 about 30 minutes or until done.


Remove from oven and cool in pan about 10 minutes, then top with the following frosting.

Frosting:

Melt:
2 sticks butter
Add:
2 tablespoons cocoa
6 tablespoons milk

Add:
1 box confectioners' sugar
1 cup pecans
1 teaspoon vanilla

This makes a soft icing.

Mary Starr Recipe - Oyster Rockefeller

A famous Creole dish from New Orleans ... a labor of love with its double sauce and all the mincing, but well worth the trouble.

3 dozen oysters on the half shell
4 tablespoons finely chopped onion
1 teaspoon finely chopped garlic
4 tablespoons finely chopped green pepper
2 tablespoons finely chopped celery
Juice of 2 lemons
1 tablespoon Worcestershire sauce
2 tablespoons chili powder
3/4 pound butter
3/4 cup fine bread crumbs
1 1/2 cups water
4 teaspoons chopped crisp bacon
Salt, white pepper and cayenne pepper to taste

Mix all ingredients except butter thoroughly. Melt butter in a sauce pan, adding first mixture and let cook five minutes. Arrange oyster shells on beds of rock salt (ice cream salt will serve) in tin pans (we used foil pans), allowing six oysters per person. Put one heaping tablespoon of the cooked dressing on each oyster and bake in 400 degree oven ten minutes. Remove from oven, put one tablespoon of following green sauce on each oyster ... return to oven for few moments and serve immediately.

Green Sauce:

2 cups cooked spinach
2 tablespoons all-purpose flour
1/4 pound butter
4 drops absinthe (optional)
1 teaspoon salt
2 tablespoons vinegar
3/4 cup water
2 dashes Tabasco sauce
4 tablespoons finely chopped parsley

Melt butter in saucepan, add flour. Blend. Add remaining ingredients and cook for three minutes.

Since I live in East, TN I have had many online friends ask if I had any Mary Starr recipes. I have looked online, and haven't been able to find any. BUT I do have the book "Starr Recipes from greystone" and I will post a few of them daily.

These are not in any way my recipes & I do not own any rights to the material. The material was published by the John T O'Conner Senior Citizens center.
