Mary Starr - Jiffy Meat Loaf Recipe

Combine & Mix Well:
1 lb ground beef
1 can spainish rice
1 egg
1 onion, chopped

Shape into a loaf or place in butter loaf pan and bake an hour at 325. May be dressed up with tomato or mushroom sauce if desired, but is moist and flavorful without any addition.

Mary Starr - Ground Beef Stew Recipe

"Easy & Fool Proof" - Mary Starr

Shape into tiny balls:
2 lbs (approx) ground beef.
Brown in 1 tablespoon margarine in a large pan
When nearly brown, add 1 onion, peeled and choppped. Cover and cook 5 minutes.

Add:
6 Medium Potatoes, peeled and cubed (salt to taste)
4 Carrots, scraped and sliced   water to cover

Cook covered, until vegetables are tender, about one hour. Thicken with: 3 tablespoons White lily flour mixed well with 1/2 cup cold water.
Any leftover vegetables, soup or cooked, diced meat may be added.

Mary Starr - Red Rice Casserole Recipe

(Charleston, SC Recipe)

2 Cups Rice (uncooked)
1 Pound Smoked Sausage, cut into small pieces
1 Medium onion chopped
1 Medium green pepper chopped
1 no. 303 can tomatoes

Cook rice in double boiler. After rice becomes tender, add tomatoes and sausage, onion and green pepper which have been sauteed in butter or drippings. Let mixture simmer 15 to 20 minutes after seasoning to taste with salt and pepper.
